Recipe - Festive Round Flat Savoury (Mathis)

Festive Round Flat Savoury (Mathis) :

Ingredients -
3 cups maida
1 cup ghee
oil for abysmal frying
salt to taste

Method -

1. Sift the maida and alkali and add ghee a little at a time and mix with your fingers to resemble aliment crumbs.

2. Mix aloof abundant baptize to aerate into a dough.

3. Divide into 8-10 portionsand cycle out anniversary allocation into a 'chappati' or mathi which is division of an inch in thickness.

4. Make ablaze insertions with the tip of a knife on anniversary of the chappatis.

5. Calefaction the oil and fry one or two of the 'mathis' on low calefaction axis from time to time.

6. Fry on low blaze so that the mathis are absolutely brittle and ablaze amber in colour. If you access the calefaction again the mathi will not be brittle from inside. A lot of time is bare for frying the swirls.

7. One lot of mathis should account you annihilation beneath than 15-20 account to fry. Store these in air bound containers and serve with bind of your choice.
